Inspired by trips to the seaside as a young boy, Steven Bennett, The Lincolnshire Chef and Pastry Chef Danny Hales have created a delicious sweet and savoury, nostalgic afternoon tea.
The menu features a selection of sandwiches in a range of flavours including tuna & cucumber, egg mayonnaise and cheese & ham.
The sandwiches are served wrapped in brown paper, as you would serve them in a picnic.
Other savouries include a mushy pea soup, Lincolnshire sausage dog with caramelised onion and a tomato relish, and miniature fish and chips which are served on a scallop shell.
Sweets start with scones, with a choice of earl grey, served with lemon curd and clotted cream and a golden raisin scone or served with raspberry jam and clotted cream.
Desserts which follow are served on a clear tray with oyster and scallop shells, dressed in locally picked samphire for show.
Desserts include a knickerbocker glory sponge cake and blueberry and white chocolate cheesecake served in a small glass and topped with a white chocolate mermaid fin, painted with edible blue and green metallic paint.
Other desserts include a salted caramel donut and solero tart, inspired by the holiday-favourite ice cream.
Steve Bennett said: “We wanted to create an afternoon tea that not only tastes amazing and is filling, but something that looks fun and appeals to all generations.
“Trips to the seaside now are different to what I remember growing up. A lot more people used to visit the British seaside for their family holiday, whereas today, most people go abroad.
“There’s a real mix of old school treats and some modern twists. Nothing says a trip to the seaside like fish and chips and freshly fried donuts!”
Hitting the restaurant for summer throughout August and September, Healing Manor Hotel serves afternoon tea Wednesday – Sunday 12pm – 3pm in the Portman restaurant, or for those wishing to dine with their dogs, in their onside dog-friendly pub, the Pig & Whistle.
The menu is also served gluten free, vegetarian and vegan, and the hotel adapt the menu’s, to cater for most dietary requirements. It costs £19.95 per person, and £14.95 for under 12s.
